Ingredients
- 1 tablespoon cornflour
- 1-3/4pt chicken stock
- 2oz long grain rice
- 4 tablespoons lemon juice (freshly squeezed)
- 3 eggs
- fresh parsley for garnish (chopped)
Preparation
Start by stiring the cornflour into 8fl oz of chicken stock, until it has dissolved. Then pour into a saucepan over a medium heat, and add the remaining chicken stock. Then bring the mixture to a boil. Next add the rice, reduce the heat and simmer for about 20 minutes until it’s nice and tender.
Remove the mixture from the heat. Then beat the lemon juice and eggs together. Whisk half the stock, a little at a time, into the egg mixture. Next pour the egg mixture into the pan with the remaining stock, mixing well. Finish by returning to a low heat and cook, stirring constantly, until the soup is thickened and serve garnished with the fresh chopped parsley.
