Green and Wax Bean Cream Soup, a Variation on Bohemian Vomatchka

Do you fancy yourself a Bohemian? If so try this variation on the Bohemian soup Vomatchka. You say “Not that kind of Bohemian!”. Well you can still give it a whirl anyway.

 This is a variation on the Bohemian creamed soup called Vomatchka. The star ingredients in this soup are inexpensive, yet extremely healthy green and wax beans. Green and wax beans are low in fat, while being high in protein and Vitamin K.

 

Ingredients for Green and Wax Bean Cream Soup

1 Cup Locally Grown or Fair Trade Organic Green Beans Cut Into 1 Inch Pieces

1 Cup Locally Grown or Fair Trade Organic Wax Beans Cut Into 1 Inch Piece

1 Cup Locally Grown or Fair Trade Organic Onions Finely Chopped

2 Cups Locally Grown or Fair Trade Organic Potatoes Cubed

2 Cups Water (Approximately)

3 Free Range Chicken Eggs

1 Pint Half and Half Cream

¼ Cup White Balsamic Vinegar

1 tsp Freshly Ground Sea Salt

½ tsp Freshly Ground Pepper

2 tbsp Organic Flour of your choice

¼ Cup Water

A few sprigs of Fresh Locally Grown Dill

How to Prepare Green and Wax Bean Cream Soup

 

Combine beans, onions, potatoes, and dill, and cover with water bring to a boil then simmer for 30 to 45 minutes.

 Beat the 3 eggs and set aside. Combine flour and ¼ cup of water and mix until smooth without clumps. Combine flour and water mixture with eggs and then add 1 pint of half & half cream and set aside. Heat 1/4 cup vinegar and set aside. Remove sprigs of dill from soup. Slowly add egg, cream, and flour mixture to soup while constantly stirring and it is still simmering and continue stirring until thickened. Remove from heat and add heated vinegar. It is ready to serve.

    Excellent healthy recipe, this would be good for vegetarians who eat eggs.

    Sounds interesting, but the idea of putting vinegar in soup doesn’t appeal to me. At least not before lunch. Will have to revisit this recipe this afternoon.
