Halloween Pumpkin Soup Recipe
An easy and quick pumpkin soup recipe for Halloween and through out the year! Can be made using broccolli or butternut instead.
If you are looking for something to do with all that pumpkin you carve out from your pumpkins this Halloween try this delicious and easy pumpkin soup recipe. You can make the same soup replacing the pumpkin with broccoli or butternut. My quantities are a bit vague as it is not like making a cake, use as little or as much pumpkin as you wish.
Ingredients:
Pumpkin
1 Onion
1 Carrot
A little oil for frying
Water – to fill the soup pot.
Salt (1 tsp – 3 tsp, depending on taste)
Soup powder (alternatively use chicken stock instead of the water and soup powder)
About half a cup of cream
Method:
In a soup pot fry the cut up onion and carrot in a little oil until the onion is glassy. Don’t worry about the size of the pieces as it all gets liquidized in the end.
Add the pumpkin chunks and salt, mixing all the time for about a minute.
Add the water or chicken stock. The water should be about 3 inches above the pumpkin pieces. If you are using water do not add the soup powder until the soup has boiled.
Bring to the boil and add the soup powder if using water and not stock.
Cook until the pumpkin is very soft, approximately half an hour.
Take off the stove and liquidize the soup. This is easier when done in small batches, but eventually get it to a smooth consistency.
Return to the stove and mix in about half a cup of cream.
It’s ready to eat!

Nice recipe . Bit of a veggie myself.
You may have to explain what on earth soup powder is though.

We had butternut squash stew (thick soup) just last night, -recipe is very similar to this and OMG Yum!
I tried mine with a big dollop of sour cream, -also good!
