Harvest Time Savory Cheese Soup

A great starter for any holiday gathering. The enormously delightful cheese flavor accompanies the vegetables perfectly.

Ingredients

  • Serves up to 4
  • 1/4 cup all purpose flour
  • 1/2 cup shredded carrots
  • 1/2 cup chopped celery
  • 1 1/2 cups shredded chedder cheese
  • 1 can chicken broth
  • 1/4 cup chopped onion
  • 3 Tbsp butter
  • 1/4 tsp salt
  • 1/8 pepper
  • 1/8 garlic powder
  • 2 cups milk

Method

  1. In a large saute pan, cook onions until tender
  2. Add flour, salt garlic powder, and pepper and stir until smooth
  3. Gradually add milk in a steady stream
  4. Cook over medium heat until bubbly and thick
  5. In a separate sauce pan, bring chicken broth to a boil.
  6. Add carrots and celery and simmer until vegetables are tender
  7. Add to milk mixture and stir until blended
  8. Add cheeses. Cook and stir until melted
  9. Garnish with scallions or chives and freshly cooked bacon pieces.
