Hearty Fish Stew

A hearty fish stew with the delicious taste of fresh cod and a mixture of tasty vegetables. This fish stew recipe is really easy to make and a perfect dish to serve for lunch or dinner.

Here’s a hearty fish stew recipe that has a lush mix of fresh vegetables. The center piece of this flavorful dish is fresh cod. It’s rich and meaty taste mixed with carrots, onions and potatoes is simply delicious.

Ingredients

  • 1 large onion (thinly sliced)
  • 2 carrots (thinly sliced)
  • 1 large potato (diced)
  • 1 parsnip (diced)
  • 1 turnip (diced)
  • 1/4 small green cabbage (shredded)
  • 1oz butter
  • 14oz canned tomatoes (chopped)
  • 1 fish stock cube
  • 12oz cod fillet (skinned and cubed)
  • 1/2 teaspoon mixed herbs (dried)
  • salt and ground black pepper

Preparation

First put all the vegetables in a large saucepan with the butter. Cook, stirring, for about five minutes. Then add the tomatoes, 10fl oz water and crumbled in the fish stock cube.

Bring to a boil, reduce the heat, part-cover and simmer for 15 minutes or until the vegetables are nearly tender. Finish by adding the fish, a little salt and pepper, and the herbs, and cook for a further five minutes. Taste and adjust the seasoning if necessary and serve hot.
