How to Make a Fat Free Soup

Though you need 30% of your calories to come from fat it is a known fact that we consume more fat than that. That is why it is important to cut fat from our diet where we can do it without sacrificing taste. The easiest way to do it is to make fat free soup.

Obviously, it will be vegetable soup. Start with some onions, carrots, green peppers and celery. Chop vegetables and put them in a pot with a little water. Let vegetables sauté in water until tender. Then add shredded cabbage, potatoes, and other root veggies if you have them, for example, rutabaga, turnips, and sweet potato. Cover with water, add salt and let simmer until vegetables are tender.

Now it is time to add zucchinis and yellow squashes. Cube them and add to the soup. Let it simmer some more. Correct salt if necessary. Those last additions to the soup will cook in less then 5 minutes so you need to be ready with chopped tomatoes and garlic. Sprinkle tomato-garlic mix with black pepper and add to the soup. Sprinkle soup with some dry oregano or basil, bring it to a boil, then close the lid and turn off the fire. Let soup sit on top of the stove for an hour.

This soup can be pureed or enjoyed as is. Served with a piece of fresh baked bread it will make an excellent choice for lunch or dinner especially on the cold winter day.
