How to Make – Banh Xeo – 40 Mins -499 Kcal

A crispy vietnamese pancake with a prawn and pork filling.
ingredients *serves 4*
12 king prawns
120g diced pork belly
2000g bean sporut
2tbsps cooking oil
120g rice flour
300ml chinese chicken stock
1 1/3 tbsps turmeric powder
100ml coconut milk
2 beaten eggs
4 tbsps cooking oil
1 red chilli
1/2 clove of garlic
1 tbsp nuoc mam fish sauce (<—- funny name)
2 tbsp sugar
2 tbsps rice vinegar
2tbsps water
4 lettuce leaves
4 springs of coriander
4 springs of mint
untensils:
mixing bowl
chopping board
kitchen knife
fryingpan with lid
scales
JUGS
spoon
fish slice
soup ladle
cooking chopsticks
whisk
mini whisk
lets cook!!!
- prepare mixing bowl
- put some water in the bowl and wash the bean sporuts
- remove the roots from the ends of the bean sprouts
- prepare chopping board and knife
- remove the seeds from the red chilli and cut into rings
- peel the garlic
- thinly slice the garlic
- cut the pork into 2cm wide slices
- peel the prawns and devine them
- prepare the mixing bowl
- put 120g of rice flour and 1 1/3 15ml of turnmeric into the bowl
- add 300ml of chicken stock
- blend the mixture with a whisk
- add 100ml of cocnut milk and stir again
- prepare small bowl
- put the sliced red chilli and garlic in the small bowl
- add 1 15 ml of nuoc mam fish sauce and 2 5ml of sugar
- mix in 2 15ml spoon fulls of rice vinegar and water
- prepare frying pan and dish
- heat 2 15ml of cooking oil in the fryin pan and boil at a moderate heat
- add the pork,prawns and bean sporuts and fry them for around 3 mins
- once they are completely cooked treansfur them to a dish
- heat 4 15ml of cooking oil in the same frying pan but over a low heat
- after mixing the batter well pour in an individual portion of batter thinly and evenly , fry till brown
- put an individual portouin of the filling on top of the pancake and pour half a beaten egg over it
- put the lid on the frying pan and steam the pancakes for 3 mins
- fry the pancake untill crispy and fold it in half and then remove it from the pan
- place some red lettuce leaves and coriander onto the plate
- place the cooked pancakes onto a dish and ENJOY!!!
