How to Make Scented Potato Soup

This is an article on how to make scented potato soup.

 Aroma of foods is  one important factors in  eating foods that  we like. Here’s  the

recipe and procedures of  delicious scented potato soup.

 125 g/4 oz butter

400 g/14 oz leeks, chopped

225 g/ 8oz onions, chopped

325 g/12 oz Maris Piper potatoes, chopped

1.2 liters/2 pints chicken stock

250 ml./8 ft oz double cream

12 fresh basil leaves

salt and pepper


 Melt the butter in a deep, heavy-bottomed saucepan, add the leeks and the onions and cook  over a  low heat until soft but not browned. Add the potatoes and simmer until the potatoes are soft and tender. Add the cream and simmer for a further-5 minutes.

Add the cream and simmer for further 5 minutes. Add the basil leaves and puree in a liquidizer or food processor. Pass through a sieve and season to taste. To serve reheat gently.

 This is a perfect simple starter on its own or serve with tomato crostini to make a more wholesome meal. Follow with calves liver with braised celery, then mango tarte tatin with vanilla.
