How to Make Soft Taco Layered Casserole

This a quick and easy recipe for the family on the go. It is a nice change to the usually soft taco night. This recipe is a combination of soft tacos and quesadillas.

Base Ingredients Needed

8 large flour tortillas

2 pounds of ground beef

1 package of taco seasoning

Shredded cheese

Optional Ingredients

Sour Cream

Salsa

Black olives

Refried beans

Diced onions

Shredded lettuce

Diced tomatoes

Equipment Needed

A large skillet

Two pie pans

Cooking spatula

Instructions

Step 1 – Preheat oven to 350 degrees.

Step 2 – Cook the ground beef. While the ground beef is cooking, add the taco seasoning. If you choose to add diced onions, now is the time to do so. Drain excess grease.

Step 3 – Place a large flour tortilla in a pie pan and start layering a portion of the cooked ground beef and shredded cheese as desired. Add another flour tortilla and again add a portion of the cooked ground beef and shredded cheese. Repeat for another layer. Add a final flour tortilla and press it down. Another added touch would be to add refried beans to each layer.

Step 4 – Repeat step 3 for second pie pan and remaining ingredients.

Step 5 - Place in the oven and bake for 15 minutes, just long enough to melt the cheese. 

Step 6 – Remove from oven and cut into four equal pieces. Place on dinner plates in with points touching to resemble a bow tie. You can choose to add toppings such as salsa, sour cream, olives, shredded lettuce, diced tomatoes, or any combination.
