An overview on how to prepare a fresh 20 pound turkey in your own kitchen.

It doesn’t have to be a special occasion to prepare a superb turkey dinner with all the trimmings.  You can prepare a meal like this as long as you are willing to invest the time.

1-     20 pound fresh turkey

2-     1 pound of extra rich Danish butter

3-     ½ cup garlic powder

4-     1 tablespoon sea salt

5-      1 teaspoon fresh ground pepper

6-     ¼ cup paprika

7-     5 strips of bacon

8-     ½ cup olive oil

9-     1 cup white table wine

10- 1 whole Spanish onion

11- Fresh rosemary

12- 2 peeled & cleaned carrots

13- 2 celery stalks.

In large basting pan place your fresh turkey.  Pull back the skin from both corners of turkey, massage in ½ stick butter on one side and ½ stick butter on the other side, sprinkle 2 tablespoons garlic powder on each side, pull skin back in place.

Next, pour wine over top of turkey, add pepper, salt, sprinkle top with paprika.  Take whole onion peeled and place inside of turkey, add celery sticks, rosemary and peeled carrots.  Finally place 4 strips of bacon on various parts of turkey, add ½ cup of olive oil on top of turkey, and place into a pre-heated 425-degree oven for approximately 4-5 hours.

Occasionally baste turkey with juice that is accumulating in bottom of pan.  You should only have to baste turkey 2-3 times before turkey if done baking. Prior to adding bacon strips to outer part of turkey, soak in warm water for approximately 20 minutes to remove most of the salt content.

This turkey is fresh, juicy and mouthwatering.
