How to Prepare Cabbage Soup, Country Style

Ingredients

  • 2/3 pound salt pork
  • 2 turnips, diced
  • 4 quarts water (16 cups)
  • 3 onions, chopped
  • 2 teaspoon fine salt
  • 4 leeks, chopped
  • 1 ham bone or 1 pound ham
  • 4 cups chopped cabbage
  • 1 slice garlic
  • 5- 6 medium sized potatoes
  • sausage, if desired
  • 1 pepper, diced
  • 3 carrots, diced

    Method

  1. put pork in a deep kettle, cover with water and boil for 10 minutes.
  2. drain and plunge into cold water. return pork and ham into kettle with water,
  3. boil for a few minutes, add salt and boil for about 2 hours. add sausage and
  4. all vegetables except potatoes. cook until vegetables are soft then add the
  5. potatoes. season with salt and pepper. skim off fat, remove pork and sausage,
  6. cut into diced and return to the soup. served with crust of bread on it.
