How to Prepare Cream Soup for Lunch

Ingredients

  • 1 onion, minced
  • 1/4 cup margarine or other fat
  • 1/4 cup flour
  • 1 cup meat stock or water
  • 1 bouillon cube
  • 1 cup vegetable cooking water
  • 1 tall can evaporated milk
  • 1 cup cooked vegetables
  • seasonings

Method

cook onion for 2 to 3 minutes in fat; blend in flour. add liquids gradually, stirring until smooth. cook until thickened, stirring constantly. add cooked vegetables, cut in small pieces. season to taste with salt, pepper, a dash of Worcestershire, a few grains of nutmeg.heat thoroughly.
