Italian Meatloaf
Here’s a spin on a classic dish. With just a few added ingredients you can make a meatloaf with a WOW factor.
What You Need:
3lbs of ground beef
3 eggs
1lb of bacon
2 pk onion soup mix (I use Lipton Brand)
Italian season
salt
pepper
garlic powder
2 cans of stewed tomatoes
What To Do:
First you will want to pre heat your oven to around 350-375 depending on your oven. Mix meat, eggs, onion soup mix and seasoning in a large bowl. When using the Italian seasoning you want to make sure you can see little green bit of the seasoning through out the meas as this and the garlic is what gives it the nice Italian flavor. Next form the meat into a loaf. It’s better if you need the meat until there is no visible cracks in the loaf. Take the bacon strips and completely cover the the loaf. Tops and sides. Then cover the loaf with aluminum foil. By covering the loaf this seals in the moisture and flavor. You will then cook the loaf until the loaf is about 3/4 done. While the meat loaf is cooking take the stewed tomatoes and place them in a sauce pan. Add your garlic and Italian season then salt and pepper to taste. Then once the loaf is around 3/4 done you will uncover the meat loaf and allow the loaf to brown. Once it’s browned take the stewed tomatoes and pour over the loaf. Then garnish the top with more Italian seasoning.
Serves about 6-8
