Jackie’s Vegetable Cheese Soup

A hearty soup with cheese, potatoes and other mixed vegetables – Good for the wintertime chill.
Ingredients
-
1 cup of diced celery
-
1 cup of diced onion
-
4 chicken bouillon cubes
-
4 cups of water
-
3 cups of cubed potatoes
-
1 cup of shredded carrots
-
1 ten ounce package of frozen creamed corn
-
1 ten ounce package of frozen mixed vegetables
-
1 ten and three fourths can of cream of chicken soup
-
1 ½ block of Velveeta cheese cubed
-
Salt and Pepper
Method
-
Using a large saucepan, bring the water to a boil and add the celery, onion and bouillon cubes.

Reduce to medium heat
-
Cook for 20 minutes
-
Add the potatoes, carrots, corn, mixed vegetables, soup and cook until the vegetables are tender.

Reduce the heat to low and add the cheese.
-
Cook and stir gently until the cheese has melted and the soup is hot but do not boil!
-
Add salt and pepper to taste

This sounds nummy. My mother-in-law loves soups, and since she just lives up the street (and I constantly cook for her), I’ll have to try this one.

Sounds delicious! I love vegetables and I love anything with cheese. A definite must try for me!
