Here are some quick to make tasty recipes.

Easy omelette

Heat a frying pan and add a few bits of cut up ham, baby spinach leaves and a
sprinkling of frozen peas/corn/ carrots. Once the spinach has wilted a little, pour over two
beaten eggs and leave until it’s cooked. Flip over for a minute and then cut into pieces and
serve. It goes down a treat, and means veges are being eaten at the same time!

Garlic ‘n’ cheese Cottage Pie

Brown enough mince for your family in a saucepan with a little water to cover
the bottom. Add diced onion and stir through, then a cup of mixed veges. Make up
a Hearty Beef cup of soup with water and add to the mixture. Keep stirring and
then pour into an oven proof dish. Sprinkle half a cup of grated cheese on top. Mash
cooked potatoes (1 potato per person) with some margarine, milk and a tablespoon of
garlic butter. Spoon the potatoes onto the mince, cover with half a cup of grated
cheese and a sprinkling of breadcrumbs. Bake for 15 minutes at 180°C, then put
under the grill for a couple of minutes. A sure-fi re favourite if you’re running out of time

SUMMER CHICKEN

Bake some chicken breasts in the oven (180-200°C). Once cooked, add a jar of
chicken simmer sauce with a little water and some frozen vegetables. Bake for a further
10 minutes and serve with rice. An easy throw together meal you can put on and leave while
doing other things
