Leek and Potato Soup

This soup is one of my family favorites. Please try and leave comments telling me what you thought. It would be very much appreciated.

Ingredients

  • 1 tbsp vegetable oil

  • 1 onion (sliced)

  • 225g/8oz potatoes (cubed)

  • 2 leeks (sliced)

  • 2 pints vegetable stock

  • salt and pepper to season

Method

Heat the oil in a large pan and add the onion, leeks and potatoes. Cook for 3-4 minutes until the vegetables soften. Add the vegetable stock and bring to the boil. Season well and simmer until the vegetables are tender. Whizz in a blender or with a hand blender until smooth. Serve hot immediately or chill until needed and re-heat until piping hot.

    I like the combination of leek and potato, so I’ll give it a try.
