Leek Soup

Recipe for leek soup.

  • Ingredients:

leek

onion

2 large potatoes

100 ml sweet cream

800-1000 ml vegetable broth

1 tablespoon butter

2 egg yolks

Salt and pepper

nutmeg

  • Procedure:

We use only the white portion of leek and cut it into slivers. With chopped onion in fry pan on high butter. (Please note! leek or onion may brown – the result could come a delicate soup bright color.) Add the vegetable stock and diced potatoes. Once the potatoes are soft and soup is not in use from heat and sieve, or Blend. Then season with ground pepper, salt and a dash of nutmeg. Add a little cream, 2 egg yolks, and serve.
