Leftover Baked Potato Soup

A recipe for leftover baked potato soup.
Ingredients
- Leftover potatoes- mashed, boiled, or baked
- Milk
- Fried bacon- crumbled
- Sautéed-Diced onion
- Garlic or garlic salt
- Medium container of Sour cream
- Butter – at least one stick
- Grated cheddar cheese
- Diced green onion
Directions
- Fry and crumble bacon
- Dice and sauté onion9 not green onion) in small amount of bacon grease
- Turn whatever left over potatoes you have into mashed potatoes by mashing with a mixer. Add hot water as needed to make them the right consistency.
- Put mashed potatoes in stock pot and bring to a warm temperature. Start adding the butter and sour cream. Stir constantly.
- When that is all blended stir in the milk slowly until you reach your desired consistency.
- Stir in diced onion and bacon crumbles, salt, garlic salt and pepper to taste. Lastly add a cup or so of cheese.
- Simmer for 15 min until all the ingredients are well heated and blended together.
- Serve. Top with diced green onion and cheese.
