Leftover Baked Potato Soup

A recipe for leftover baked potato soup.

Ingredients

  • Leftover potatoes- mashed, boiled, or baked
  • Milk
  • Fried bacon- crumbled
  • Sautéed-Diced onion
  • Garlic or garlic salt
  • Medium container of Sour cream
  • Butter – at least one stick
  • Grated cheddar cheese
  • Diced green onion

Directions

  1. Fry and crumble bacon
  2. Dice and sauté onion9 not green onion) in small amount of bacon grease
  3. Turn whatever left over potatoes you have into mashed potatoes by mashing with a mixer. Add hot water as needed to make them the right consistency.
  4. Put mashed potatoes in stock pot and bring to a warm temperature. Start adding the butter and sour cream. Stir constantly.
  5. When that is all blended stir in the milk slowly until you reach your desired consistency.
  6. Stir in diced onion and bacon crumbles, salt, garlic salt and pepper to taste. Lastly add a cup or so of cheese.
  7. Simmer for 15 min until all the ingredients are well heated and blended together.
  8. Serve. Top with diced green onion and cheese.
