Leftover Turkey Tortilla Chip Bake

This dish is great after holidays when everyone is tired of turkey and dressing. It is also an easy way to use up the dark meat as well as odd shreds and chunks nobody wants. This recipe reheats well and tastes even better as a leftover!

1 onion, chopped

1 clove garlic minced

1 can condensed cream of chicken soup

1 soup can milk

1 bag tortilla chips, plain or flavored

Leftover turkey

1 small jar salsa, brand and degree of heat to your taste

1 16oz package shredded Mexican blend or taco cheese

Saute onion in medium skillet until brown.   Add garlic, soup and milk.   Stir and simmer until heated through.  Crush about 1/2 the bag of tortilla chips.  Spread half the crushed chips in the bottom of 13″x 9″ baking dish.  Layer leftover turkey on top.  Hand tear and shred meat as needed to make an even layer.  Spoon half the soup mixture over the turkey.  Spoon a layer of salsa over the soup.  Sprinkle with half of the shredded cheese.  Repeat layers one more time.  Bake at 350 degrees 35-40 minutes or until hot and cheese is bubbly.
