Lemon Chicken Soup
Chicken Soup with a twist.
1 chicken breast, cooked and diced
6 cups chicken broth
1/2 cup orzo
2 eggs
2 Tablespoons lemon juice
1 Tablespoon water
Salt and pepper to taste
Bring broth to boil. Add orzo and cook until tender. Remove from heat. Skim off about a cup or more of broth. Set aside. Add chicken to broth and orzo. Beat eggs until frothy. Mix lemon juice and water. Slowly add to eggs while continuing to beat. Slowly dribble the cup or more of broth into egg mixture still beating the egg mixture. Pour egg mixture into broth mixture stirring constantly so it does not curdle. Season to taste and serve immediately.
