Lentil Soup

Wash 1 (1 pound) package lentils. In large saucepan heat:

lentils

5 cups water

2 (16 ounce) cans tomatoes

2 bay leaves

1 tablespoon salt

1/4 teaspoon pepper

Heat to boiling. Then reduce heat and add 1 1/2 pounds Polish sausage (or Kielbasa). Cover and simmer 15 minutes. Meanwhile, in large skillet over high heat, fry 8 bacon slices, cut up, until slightly limp. Spoon all but about 1 tablespoon fat from skillet.

Add: (to bacon)

1 cup chopped carrots

1 cup chopped celery

1 medium onion, sliced

Cook over medium heat 15 minutes, stirring occasionally. Add mixture to lentils and continue cooking 30-45 minutes (or till lentils are done). Slice Kielbasa. Makes 8 to 10 servings.
