Lentil Soup Caribbean Style

This is a very quick and cheap vegetarian meal or just for those who want to have one meatless meal. Excellent for those watching their weight.

Ingredients

  • 1/2 minced onion
  • 3-4 minced mushrooms
  • 1 grated carrot
  • ½ stalk of finely chopped celery  
  • 2 garlic cloves, crushed
  • 1 chopped Roma tomato
  • ½ teaspoon turmeric
  • ½ teaspoon thyme
  • Dash of ground pimento
  • 1 teaspoon ground cumin
  • Dash of hot pepper
  • 11/2 cups red or green lentils (Split peas)
  • 4 cups water
  • 1/2 can coconut milk (optional)
  • salt and black pepper to taste

Method

Use 3/12 cups water, if you use coconut milk.  Put water, milk and lentils in a crock pot.  Chop onion, mushrooms, celery, carrot, and tomato in food chopper. Add chopped ingredients to the liquid in the crock pot.  Add seasonings and cook on high for 3 hours and 15 minutes.
