Macaroni with Chicken Mushroom

Besides having rice for our main meal most of the days, we do opt for other staple food like pasta especially during weekends and holidays.
No doubt rice is our staple food most of the days, I do cook something different for a change especially during weekends and holidays when I am free to let my cooking ideas flow in my little kitchen.
Just last week I cooked a pot of macaroni with cream of chicken mushrooms. The cream of chicken mushrooms was actually the extra from the cream of mushroom chicken pies that I baked on the same day.

As a result, we had a main dish and dessert with cream of chicken mushrooms on the same day. The preparation is simply and easy, this is what you need to have and do:
Ingredients:
- half a packet of macaroni of any brand
- half a can of button mushrooms, chopped into smaller pieces
- 150 gms minced chicken
- a small onion, diced
- some shredded carrot
- a packet of cream of mushroom soup powder (can be replaced with a can of cream of mushroom soup)
- 1 litre water (800 ml for boiling of the macaroni, and 200 ml for the filling)
- 3 tbsp oil
Method:
- In a sauce pot boil the macaroni with a teaspoon of oil till thoroughly cooked, strained;
- Lightly boil the cream of mushroom powder with 200ml water till the powder is completely dissolved. Set aside.
- Heat a sauce pan, add in oil follow by small onion, minced chicken and carrot; add in some water, keep stirring until the chicken is cooked
- Add in the cream of mushroom soup with the chicken, stir till it is well combined.
- Pour over the macaroni and served immediately.
- Best with a sprinkle of parmesan cheese.
