Main Dishes

The recipes for these main dishes are tried and true favorites. When a recipe is simple and delicious, everyone is pleased. Cook up a few of these main dishes to delight family and friends.

Breast of Chicken Casserole

2 boxes frozen chopped broccoli

4 chicken breasts

2 cans of cream of mushroom soup

3/4 cup mayonnaise

1 teaspoon Real Lemon

cheddar cheese or Cheese Whiz

2 cups bread crumbs

Bake chicken at 350 degrees Fahrenheit for 50 minutes.  De bone chicken and break into pieces.  Steam broccoli and place in bottom of 9″ x 12″ baking pan.  Layer chicken over broccoli.  Combine soup and mayonnaise and spread over chicken. Top with grated cheddar or top with Cheese Whiz.  Bake at 350 degrees Fahrenheit for 35 minutes.

Chili-Roni

1 package chili seasoning mix

1 pound ground beef

1/2 cup chopped onion

1/2 cup chopped bell pepper

1 can chopped tomatoes

3/4 cup water

2 cups cooked elbow macaroni

1 1/2 cups shredded cheddar cheese

Brown hamburger.  Stir in chili seasoning, onion, pepper, tomatoes, and water.  Bring to a boil, then simmer for 15 minutes. Add cooked macaroni.  Simmer 5 minutes.  Top with cheddar cheese.

Stuffed Green Peppers

1 pound hamburger

1/2 cup Minute Rice

1/2 cup chopped onion

salt

pepper

4 or 5 green peppers (par boiled and cut in half)

1 can tomato soup

Mix hamburger, rice, onion, salt, and pepper.  Fill peppers with mixture and place in crock pot.  Cover peppers with tomato soup.  Cook until rice is completely cooked.
