Meat Soup

A Mediterranean basic meat soup, delicious and healthy in its simplicity.

Ingredients
- 800grams – 1kg veal for soup in pieces
- 3 carrots in pieces
- 1 big onion in pieces
- 2 (or more) cups of selery in pieces (leafs and root) [the ingredient that gives the basic taste]
- 3 potatoes in pieces
- salt and little pepper
- few olive oil
Method
- Boil the meat until it is almost ready in 2 litres of water, removing the foam that produced.
- Add the carrots, the celery, the onion, salt and the olive oil.
- Continue boiling for some minutes and add the potatoes until ready.
- Serve with enough lemon juice.
- With this basic recipe you can make many variations. Trust your imagination.
