Meat Soup

A Mediterranean basic meat soup, delicious and healthy in its simplicity.

Ingredients

  • 800grams – 1kg veal for soup in pieces
  • 3 carrots in pieces
  • 1 big onion in pieces
  • 2 (or more) cups of selery in pieces (leafs and root) [the ingredient that gives the basic taste]
  • 3 potatoes in pieces
  • salt and little pepper
  • few olive oil

Method

  1. Boil the meat until it is almost ready in 2 litres of water, removing the foam that produced.
  2. Add the carrots, the celery, the onion, salt and the olive oil.
  3. Continue boiling for some minutes and add the potatoes until ready.
  4. Serve with enough lemon juice.
  5. With this basic recipe you can make many variations. Trust your imagination.
