Mexican Casserole

This is a family favorite that can easily be adapted for those that are health conscious. Good with a salad and garlic bread.

Ingredients

1 lb. hamburger, ground turkey or chicken
2 bags boil in bag rice, cooked as indicated
16 oz jar salsa, as mild or as hot as you like
1 can refried beans
16 oz container sour cream, regular, low fat or fat free
1 can cream of mushroom soup
1 packet taco seasoning, mild or hot
1/2 cup beef broth
1/2 cup sliced fresh mushrooms
1/4-1/3 cup each diced onion and green pepper
2 cups shredded cheese, monterey jack, taco or any mexican blend

Directions

Brown hamburger, drain. Add taco seasoning and beef broth and simmer 3 or 4 minutes.
Mix all ingredients except cheese and pour into a greased 9 x 13 pan. Sprinkle cheese on top and cover with greased sheet of aluminum foil. Bake at 350 degrees for 40 minutes, uncover and cook additional 20 minutes until cheese browns slightly around the edges.
