Mexican Casserole
Quick and simple casserole that can be made with beef or turkey.

Ingredients
1 lb of ground beef or ground turkey
1 can of cream of chicken soup
1 can of diced tomatoes and chilis
1 can of mexican corn
1 can of chili
12 corn tortillas
1 pkg of Colby & Monterey Jack cheese (shredded)
1 pkg of Mozzarella Cheese (shredded)
sour cream
chives
1 sm yellow or white onion
1 sm bell pepper
seasoning salt
garlic powder
chili powder
paprika
onion powder
black pepper
Directions
Dice onion and bell pepper. Add ground turkey or beef to cook add all seasonings (seasoning salt, garlic powder, onion powder, chili powder, paprika, and black pepper). Then add onions and bell pepper to meat mixture until meat is fully cooked. Drain meat. Then in another bowl, add canned diced tomatoes and chilis, chili, cream of chicken, and mexican corn in a bowl and mix until completely combined. Add meat mixture to the bowl and stir until well blended. Spray Casserole dish with Pam. Mix Cheeses together. Layer first with corn tortillas then meat mixture then cheese and repeat until put last of corn tortillas and cheese on the top. Cook until cheese on top is a golden brown.
