Mexican Tomato Soup

A hot and exciting start to any meal. Cottage cheese dumplings impart a unique taste to this soup.

 

Ingredients:

  • Tomatoes – 6
  • Spring onions – 3
  • Capsicum – 1, finely chopped
  • Baked beans – 3 tablespoon
  • Sugar – 3 teaspoon
  • Chilli sauce – 2 teaspoon
  • Oil – 2 teaspoon
  • Salt – as per your taste
  • For the dumplings:
    • Cottage cheese- ½ cup
    • Plain flour – 1 tablespoon
    • Copped coriander – 1 tablespoon
    • Chopped green chillis – 1 teaspoon
    • Salt to taste
    • Oil for greasing
  • For the garnish:
    • ¼ cup grated cheese

 

Method:

  • Place tomatoes in a shallow microwave-safe bowl and prick them. Microwave them on HIGH for 2 minutes.
  • Cool slightly, peel and puree in a blender till smooth, add one cup of water and keep aside.
  • Combine the oil and onions in a microwave-safe bowl and cook then on HIGH for 1 minute.
  • Add the capsicum, mix them well and cook them again on HIGH for 1 more minute.
  • Add the pureed tomatoes, baked beans, sugar, chili sauce and salt. Cook it on HIGH for 3 minutes, stirring once in between after 1 and half minutes.
  • For the dumplings:
    • Combine all the ingredients in a bowl and mix well.
    • Divide the mixture into 12 equal portions.
    • Roll each portion into a ball and  place on a greased shallow microwave-safe dish.
    • Microwave them on HIGH for 2 minutes and keep aside.
  • Add the dumplings to the soup and microwave for the final time on HIGH for 1 minute.
  • Serve hot garnished with grated cheese.
