Mexican Tomato Soup
A hot and exciting start to any meal. Cottage cheese dumplings impart a unique taste to this soup.

Ingredients:
- Tomatoes – 6
- Spring onions – 3
- Capsicum – 1, finely chopped
- Baked beans – 3 tablespoon
- Sugar – 3 teaspoon
- Chilli sauce – 2 teaspoon
- Oil – 2 teaspoon
- Salt – as per your taste
- For the dumplings:
- Cottage cheese- ½ cup
- Plain flour – 1 tablespoon
- Copped coriander – 1 tablespoon
- Chopped green chillis – 1 teaspoon
- Salt to taste
- Oil for greasing
- For the garnish:
- ¼ cup grated cheese
Method:
- Place tomatoes in a shallow microwave-safe bowl and prick them. Microwave them on HIGH for 2 minutes.
- Cool slightly, peel and puree in a blender till smooth, add one cup of water and keep aside.
- Combine the oil and onions in a microwave-safe bowl and cook then on HIGH for 1 minute.
- Add the capsicum, mix them well and cook them again on HIGH for 1 more minute.
- Add the pureed tomatoes, baked beans, sugar, chili sauce and salt. Cook it on HIGH for 3 minutes, stirring once in between after 1 and half minutes.
- For the dumplings:
- Combine all the ingredients in a bowl and mix well.
- Divide the mixture into 12 equal portions.
- Roll each portion into a ball and place on a greased shallow microwave-safe dish.
- Microwave them on HIGH for 2 minutes and keep aside.
- Add the dumplings to the soup and microwave for the final time on HIGH for 1 minute.
- Serve hot garnished with grated cheese.
