Minestra is verity recipe.

Ingredients:

½ cup chopped onions                   

2 cups diced cabbage

½ cup coarsely grated carrots                  

1 bay leaf

2 stalks celery, sliced                               

1/8 tbsp oregano

2 leeks, sliced                                           

1 cup diced potatoes

2 tbsp special oil                                      

1 tomato, peeled and diced

6 cups boiling water                                

2 tbsp minced parsley

1 tbsp salt                                                 

1 clove garlic, minced

1 cup green beans, sliced

Procedure:

Sauté the onions, carrots, celery and leeks in the oil until lightly browned. Add the water, salt, beans, cabbage, bay leaf and oregano. Bring to a boil, cover and cook over low heat 30 minutes. Add the potatoes and tomato; cook 20 minutes. Stir in the parsley and garlic; cook 10 minutes longer. Serve with grated sapsago cheese if desired.
