Mom`s Beef and Garden Vegetable Soup

Swiss Chard and Cherry Tomatoes are so packed with nutrients and so easy to grow that I had to start coming up with ways to use them all during the growing season. This soup is delicious, nutritious and takes only 15 minutes to make.

Ingredients

  • 1 large Onion peeled and chopped
  • 2 large Carrots peeled and chopped
  • 2 ribs of Celery chopped
  • 2 small Zucchini chopped
  • 2 cups leftover cubed Roast Beef
  • 2 cups shredded Swiss Chard or Baby Spinach
  • 3/4 cup halved Cherry Tomatoes
  • 1 ½ liters Beef broth
  • 1 clove Garlic
  • 1 tsp each of dry Thyme and Basil
  • Salt and Pepper to taste

Method

  1. In a large pot, saute onion, carrot, garlic, zucchini and celery in a little oil until tender
  2. Add broth, cubed beef , Swiss chard and dried herbs and bring to a boil
  3. Reduce heat and cook until Chard is tender
  4. Stir in Cherry tomatoes, season to taste with salt and pepper and cook 2 minutes more before serving

    Lanne, this sounds so good. My vegetable plot hasn’t really got going yet, but I’m hoping for a bumper crop, and this soup recipe will be a good one to try.

    Thanks Dee. It is delicious, but the best part is that it is so easy to make. I am a huge soup fan, but I used to go all summer without making it because the long cooking time heated up my house. So a few years back I decided to experiment. I figure if Rachel Ray can do nutritious meals in 30 minutes…I can do it in less….lol I`ll be adding more shortly.

    Nice work,I end up freezing things too! Just to make sure I don’t waste food! Especially the good stuff from my garden!
