Mom’s Homemade Meatloaf

My mom loved making meatloaf and making different variations of the recipe. This recipe is my favorite and it is simple and easy to make.

One lb of groud beek, chuck, turkey, venison, buffalo or whatever ground meat you prefer.

One chopped onion

two eggs

one to two cups of bread crumbs…I now use Italian

Or you can use regular bread crumbs and add some

Italian Seasoning

Salt and Pepper to taste

One can cream of chicken soup

The recipe is the same, but I changed the part about putting the meat into a regular pan and placing it in a broil pan instead.

Mix all of the above ingredients in a bowl.  Get your hands right in there and mix it up.  I think that you can mix it up better with your hands than you can with a utensil.

After it is all mixed together, then shape the meat into a loaf on top of a broil pan.  That way all of the fat and juices seep through into the pan and you don’t have any fat in the meat.

After you have shaped the meat into a loaf, the spread the cream of chicken soup on the top and sides of the meat.  Then place it in a preheated 400 degree oven for about an hour or until meat is done.  Of course you can still add catsup, but at least try the cream of chicken soup.  You may find that you like it.  To me it is the best.

    Meatloaf and mashed potatoes are two foods that I miss a lot living here in Korea.
