- 12oz Your Choice of Mushrooms (Finely Chopped)
- 2oz Butter
- 3 Tablespoons Fresh Flat Leaf Parsley (Chopped)
- 2 Tablespoons Fresh breadcrumbs
- 1/2 Garlic Clove
- 1-1/2 pt Chicken Stock
- Pinch of Freshly Nutmeg (Grated)
- 2 Tablespoons Double Cream
- Salt and Ground Black Pepper
Start by sauteing the mushrooms with the butter in a heavy saucepan for a few minutes. Then add the parsley and cook, stirring, until soft. Next add the breadcrumbs and garlic, stir and pour in the chicken stock with a pinch of nutmeg.
Then season with salt and pepper and bring to a boil and simmer for about 15 minutes. Next puree the soup in a food processor or blender until smooth. Finish by returning to a clean pan, stir in the cream and reheat gently and serve hot.
