Nationality Days Recipes: Indonesia Fried Egg Rolls (Lumpia Goreng)
Here is another delicious recipe, this time from Indonesia.
1 cup sifted all purpose flour
2 large eggs beaten
1 cup water
1 teaspoon salt
3 cups vegetable oil
2 bean cakes julienned as thin as possible
1 medium onion, sliced
1 clove garlic, sliced
1/2 cup sliced pork or chicken
1/2 cup shrimp, cooked, shelled and split lengthwise
2 Tablespoons soy sauce
salt and freshly ground pepper
1 cup bean sprouts
1/2 cup sliced cabbage
1/2 cup sliced bamboo shoots
1. Prepare a batter by mixing the flour with the eggs water and salt. Fry into about 6 to 8 thin pancakes, about 8 inches in diameter Reserve.
2. Heat about 1/2 cup in a large skillet. Fry the bean cakes in it until light brown. Drain off the oil, leaving one Tablespoons in the pan. Fry the onion and garlic two minutes. Add pork or chicken, shrimp, soy sauce, salt and pepper to taste, bean sprouts, cabbage and bamboo shoots Cook 15 minutes then cool
3.Fill each pancake with about with about 2 Tablespoons of the filling. Spread the filling out lengthwise and fold the pancake envelope fashion, first folding over the flap along the length of the filling then folding over the two flaps along the ends of the filling. Moisten the edge flap with salted water and seal
4. Fry the egg rolls in a deep fat bath with the remaining oil until brown. Drain on paper towels.

This sound really good. I like egg rolls but I like spring rolls even better. I’ve got to try these. This recipe is a little different from the one I have and I’m just not happy with mine. Of course it could be the cook and not the recipe. Nice share. Thanks.

See, this is where my food cravings come from. Not bad food, but well-made fresh (but fattening) things like these. I watched carefully through every step. Now I want some, and it’s midnight. Thank you for the recipe. Pretty easy to make!
