New England Boiled Dinner

This is an interesting recipe called New England Boiled Dinner.Try it.

Ingredients:

4 pounds corned brisket of beef

1 yellow onion, peeled

1 clove garlic, sliced

1 bay leaf

4 peppercorns

8 small potatoes, peeled

8 small carrots, scraped

3 pound head cabbage cut into 8 wedges

Procedure

          Wash the corned beef, cover with water, and bring to a boil. Skim the top. Add the yellow onion, garlic, bay leaf, and pepper corns. Cover and cook over low heat for 3 hours, or until the meat is tender. Transfer the meat to a heated platter and keep warm.

          Cook the potatoes, whole onions, carrots, and cabbage in the corned beef liquid for 30 minutes longer. Drain and arrange the beef.

    Growing up in New England, I’ve eaten this a couple times a year for over forty years.

    First, boil your meat and your vegetables separately. The meat will have better texture, and the vegetable less salt.

    The brisket often comes with fat, and I recommend you trim that off when its raw, but cook it along with the rest, removing it for future use before serving.

    After skimming, take off the heat, wrap four or five ice cubes in paper towel and skim the top of stock with that, very rapidly, and you can pick up every speck.

    Lastly, pair this meal with spicy, grainy mustard (Polish mustard is my favorite) and hearty black bread & butter.

    Cold beer could not hurt either.

    I was thinking that this would be a tasteless meal but I think it all works very well together and looks so easy!
