New Mexican Green Chile Stew

New Mexican Green Chile Stew is perfect for dinner on a cold winter night. It’s an easy recipe to make and makes use of less expensive cuts of meat.

Note: The green chiles called for in Green Chile Stew are New Mexican-type chiles. They can be bought frozen. If unavailable, substitute California Anaheim-type chiles, which will be milder.

Ingredients:

*2 lbs stewing pork, cut into chunks
*2 tbs oil or lard
*1 large onion, sliced
*2 or more cloves garlic, chopped
*6–8 New Mexico green chiles, chopped
*2 tsp salt
*pinch of Mexican oregano
*water or broth
*3 potatoes, peeled and diced
*1 c chopped fresh or canned tomatoes (optional)

Preparation:

Heat the oil or lard in a heavy stew pan and brown the chunks of pork. Add the onion and garlic to sweat.

When the onion is softened, add the green chiles, salt, Mexican oregano and water/broth to cover. Bring to a boil, cover and lower the heat. Simmer until the meat is nearly cooked.

Add the potatoes and tomatoes (if used) and continue to cook until the potatoes are done.

Serve New Mexican Green Chile Stew with warm tortillas, Sopaipillas or Navajo Frybread. Churros, Biscochitos and Hot Chocolate for dessert!
