Oatmeal Soup Recipe
Delicious oatmeal cooked with fresh vegetables and herbs makes a fabulous soup. The rich and creamy taste of this oatmeal soup has almost a warming affect, that makes it perfect for breakfast.

This scrumptious recipe for oatmeal soup is really easy to prepare and cook. It is made with fresh leeks, carrots, potatoes, celery and of course oatmeal. The combination of flavors makes it probably one of the best oatmeal soup that I’ve tasted. It’s one of those dishes You make to serve for breakfast the next day.
Ingredients
- 1/2oz margarine or butter
- 1 tablespoon groundnut oil
- 2 large leeks (thinly sliced)
- 4 carrots (sliced)
- 2 potatoes (diced)
- 2 celery sticks (sliced)
- 2pt chicken stock
- 1 tablespoon chives (dried)
- 1 tablespoon shallots (dried)
- 1/2 tablespoon (tarragon)
- 1/2 tablespoon dried basil
- 1 teaspoon salt
- 4oz oatmeal
- 8fl oz white wine
Preparation
Start by heating the margarine or butter and the groundnut oil in a large saucepan over medium heat. Then add the leeks and sweat for two to three minutes. Next add the carrots, potatoes, celery and chicken stock.
Bring the mixture to a boil. Sprinkle in the chives, shallots, tarragon, basil and salt. Boil lightly for about 20 minutes. Then add the oatmeal and cook for a further five minutes. Finish by adding the wine and cooking for another 15 minutes and then server pipping hot.

I think oatmeal soup is safe to eat.
