Olive and Almond Soup

Olive an Almond Soup is one of the most decadent soups You will ever have a chance to taste. It is a relatively cheap dish to make, depending on the quality of Your ingredients. The better the ingredients, the better this soup will taste. Olive an Almond soup is a thick soup consisting of an almond broth with olives, an topped with olive oil. It will take about 45 minutes to complete this dish from prep to serve.
Ingredients

- 6 oz of Almonds “Blanched”
- 2 oz of Green Olives “Sliced”
- 2 oz of Black Olives “Sliced”
- 3 Egg Yolks “Hard boiled”
- 1 litre of Chicken Stock
- 1 oz of butter “Softened”
- 1 oz plain Flour
- 4oz single Cream
- 1/4 teaspoon Salt
- 1/4 teaspoon fresh ground Pepper
- 1 tablespoon olive oil
Method
To get started You will want to boil the 3 eggs an Bring the Chicken stock to a simmer. While Your eggs an broth are cooking, You will want to blanch the Almonds and slice Your green an black olives. With a mortar an pestle, grind down the almonds into a thick paste. At this point Your eggs should be all done, remove the shells an egg white, and add the yokes to the almond paste with 1 tablespoon on chicken stock. Mix well, set aside.
Mix the butter an flour together into a smooth paste, then slowly add to the simmering chicken stock, whisking in the butter an flour combination, only add Little at a time then whisk an repeat until all is mixed in well an dissolved. Next take the almond paste an start adding it to the broth You just prepared, Add in slowly until the broth is smooth, gently simmer for about 20 minutes stirring every so often. As the broth is cooking, take Your sliced green an black olives, an add to a new pan on low heat. Add olive oil, do not burn the olives, only cook for a few minutes, or until hot. Remove olives an drain oil out of the pan. Save the oil for later.
After Your broth has fully cooked for about 20 minutes, You will then sieve (strain), the broth into the pan, You just cooked the olives in. Now stir in the cream, add the green & black olives, add the salt an pepper. Then reheat until Warm. After it has been reheated You will want to place in bowls, You will then take the olive oil an drizzle Little on the top of each soup. Then serve.
