Onion Soup

2 teaspoons butter

2 small onions, sliced thinly

1/4 teaspoon sugar

2 teaspoons flour

2 cups water or consomme

salt

2 thick slices french bread

grated italian cheese

Melt butter; add onion and cook slowly until onion is soft (about 5 minutes). Add sugar and flour. Stir and cook 1 minute. Add water or consomme. Season. Simmer at least 30 minutes. Leave to mellow a day to develop flavor. Toast french bread. Sprinkle with cheese and put in 2 bowls. Pour soup over toast and set bowls in 400 degree oven to melt and brown cheese. Pass extra cheese to sprinkle over the soup.
