Pea and Mint Soup Recipe
Here’s a refreshing pea and mint soup that is really delicious. Tasty peas mixed with mint is the perfect combination of flavors that are simply luscious. Give this tasty pea and mint soup a try. You will enjoy every last bite.

This delicious pea and mint soup is very simple to prepare and it should only take about 45 minutes to cook. The taste of peas and mint mixed into a wonderful soup is delightful and is sure to set the mood for Your main course at dinner.
Ingredients
- 1lb Frozen Peas
- 1-1/2pt Vegetable Stock
- Pinch of Granulated Sugar
- 1 Large Sprig of Fresh Mint
- 1 Egg Yolk
- 2fl oz Single Cream
- Salt and Freshly Ground Black Pepper
Preparation
Place the peas in a large pan with the vegetable stock, sugar, mint and a little salt and pepper. Bring to a boil, then reduce the heat, cover and simmer for about 15 minutes. Discard the mint, then puree the mixture in a blender or food processor.
Return the mixture to the heat and blend the egg yolk with half the cream and stir it into the soup mixture. Now place the soup in a clean pan and lightly reheat, but do not allow it to boil. Taste and adjust the seasoning if necessary. Finish by serving garnished with the remaining cream.
