Peanut Butter Stew

Simple cooking for any one who wants to save money.

Peanut butter stew (serves 4-6) This is an African recipe.
Ingredients
- 1 kilo stew meat
- 2 peppers
- 3 tomatoes
- 1-2 onions
- 2 carrots
- 1-2 sweet potatoes
- 2 garlic cloves crushed
- pepper
- 1 chile crushed
- 6 table spoons of peanut butter
- 6 table spoons of soy sauce
- coconut milk (optional)
- 500 ml water and stock cub
Method
- Add everything in a big pot or oven dish, except for the, tomatoes, potatoes and peanut butter and soy sauce.
- If you use the oven cover the dish with aluminium foil.
- Add the potatoes after 1 hour minutes.
- Add the tomatoes in the last 15 minutes.
- Put the peanut butter with the soy sauce in a pan and add water (not too much). Cook this mixture on a low heat until you get a nice sauce like substance. It looks like a mess at first, but don’t worry, it does work. Just add water if it is too thick or peanut butter when to watery. You may add coconut milk if you like this.
- Take the dish out of the oven after a total of 1-1.5 hours (the longer the better)
Serve with the peanut sauce.
Tip This is actually nicer the next day.
