Peanut Soup

A hearty meat, vegetable, and peanut combo warms hungry children on a chilly day.

Ingredients

  • 1 pound cubed beef stew meat
  • 1 cup chopped onion
  • 1 Tablespoon shortening
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • Dash garlic powder
  • Dash ground nutmeg
  • Dash ground cloves
  • Dash paprika
  • 1 – 8 ounce can whole tomatoes, cut up
  • ½ cup finely chopped peanuts
  • 1 – 6 ounce can evaporated milk
  • 1 teaspoon cornstarch

Method

  1. In a 3 quart saucepan, brown meat and onion in hot shortening.
  2. Add 1 ½ cups water, salt, pepper, garlic powder, nutmeg, ginger, cloves, and paprika.
  3. Simmer, covered, until meat is tender, about 1 hour.
  4. Add tomatoes and peanuts.

  5. Blend evaporated milk with the cornstarch and stir into the soup.
  6. Bring mixture to a boil, stirring constantly.

Makes 4 servings
