6 pounds green tomatoes
1 large green pepper
1 medium red pepper
1 very large dry onion
4 to 6 stalks green celery
1 small head cauliflower
2 large garden cucumbers (optional)
Slice very thin, or chop, dice or grind all of the above–the tomatoes several hours before the others, salted (2 tablespoons)-and drained. Mix in a large kettle.
3 tablespoons mixed whole pickling spice
a very few dashes cayenne pepper
1 cup sugar
1/2 cup brown sugar (packed)
1 cup strong apple cider vinegar
2 cups water
(stir and taste for flavor balance)
Cook over medium heat; stir constantly to preven scorching, until vegtables are clear and liquid reduced by half–near 1 hour.. Seal while hot in sterile jars. Makes 8 pints.
