Pot Luck Caserole Ideas

Just a few quick recipes for a last minute pot luck.

 Christmas is here once again and once again comes the dreaded pot luck lunch at your work. Every year you wonder to yourself what on earth can I take that won’t cost me an arm and a leg and a trip out in the horrible weather? Well don’t worry I’ve got some really great ideas and you probably have most the ingredients lying around your kitchen or in your fridge. It really doesn’t take much to make a pot luck when you think caserole because it can be a really quick and easy dish that feeds many people. Not to mention when you take to a pot luck you don’t really have to feed everyone with that one dish just take enough for people to choose what they would like. Some great ideas for caseroles are a great Plov, tuna caserole, enchilada caserole and even a great brocoli, cauliflower and cheese caserole. Here in I will go into detail about the recipes and how easy they are to make.

  The first recipe is going to be for the Tuna caserole which is super easy you don’t even have to cook. All you need to do is get about 3-4 cans of tuna in water, a head of lettuce and some mayonnase. Now you will need to get the lettuce rinse it off and cut it into tiny pieces like for a stir fry. Make it as small as possible and then put in a large bowl. Now you can drain your tuna and add them to the lettuce then add salt, pepper and the mayonnaise about two tablespoons. Mix all of it together and chill overnight for a great tasting and quick caserole to take to your work. This is a really great no fuss recipe that is sure to please everyone at the part and can be served with corn chips on the side or it can be a side for another main dish at the pot luck.

  Now for the Brocoli Caserole you are going to need about 1 lb of brocoli, 1 lb of cauliflower, bread crumbs, salt, pepper, chili powder if you like, and cheese. You are going to start out by putting a pot of about 4 cups of water with salt to boil on the stove. Rinse off your veggies and put them in a steamer insert to put in your pot and steam them for a good ten twenty minutes or until you see they are tender enough. Get your caserole dish ready and set your oven to broil. Put the cauliflower, brocoli mix in the pan then add a salt, pepper, chili powder to taste, grate some cheese over the top and sprinkle with bread crumbs. Broil the entire mix in your oven for about ten minutes or untill cheese is completely melted and bread crumbs are golden brown. Now you are ready to go to your pot luck and be the star of the party.

  Enchilada caserole is by far the easiest because you can just simply put all the ingredients in your slow cooker and cook it for a good twenty minutes and you are ready to go. Depending on which you want to make either cheese or beef you will need to vary your time. For cheese it can all go in the slow cooker for beef you may want to cook your beef a bit first before it goes in just to make sure it cooks all the way through. You are going to need, cheese or beef, red enchilada sauce, corn tortillas, chili powder(optional), salt, pepper. Easy enough so far don’t you think, now if you are doing beef, cook your beef for a bit in a saute pan with chili poweder, salt and pepper, put aside. In your crock pot layer sauce, corn tortilla, cheese, beef, then corn tortilla, then sauce, ten beef, cheese, sauce, tortilla, repeat until crock pot is full. Once it is full you will let it cook or a good twenty minutes and you are ready to go.

  Plov I think is an easy dish but it is a bit more involved than the others. You are going to need 1lb of lamb or cubed stew beef, 5 black peppercorns, 2 bay leaves, 4 cups water, salt and pepper to taste, 1 onion, 2 tomatoes, and 3 cups of rice. Put a dutch oven on to medium heat and add 2 TBLSP olive oil and onions, gently cook the onions until they are caremelized, then add the tomato. Cook for another two to three minutes and add the beef or lamb, peppercorns, and salt and pepper. Your are going to get a nice brown color on the meat of your choice and then you will add the water and rice to the mixture. Once water and rice are added you will cook this until all the water has soaked into the rice and it is nice and soft. This whole process will take a good half hour to 45 minutes but it will definitely be worth the wait once you taste this delicous meal.

  So there you have it everyone some great and simple ideas of how to be the star at your next pot luck at work. I hope that these recipes will serve you as well as they have served me in my many years of pot luck parties. They always have been the talk of the office when I use them and if you want to make some adjustments feel free too. It’s great to experiment and add or take away things from any recipe, remember they are not set in stone and can be adjusted to your preferences.
