Potluck Stew Recipe

The origin of words is an interesting study take for instance the term "potluck"! A couple of centuries ago whenever an unannounced visitor was served a meal it was called "a pot luck meal" meaning whatever was served would have to be what was there in the pot on the stove so if it was good it was the guests’ luck and hence the term "potluck".

This yummy recipe is called “potluck stew” because it is often prepared from whatever is leftover from a roast dinner or lunch-the meat, potatoes, peas and corn! No gravy please!!! 

Of course the ingredients don’t have to be the remains of a previous meal and the stew can be made from fresh ingredients too. Here’s how:

4 rashers bacon

500 grams chicken pieces or chopped beef(or both)

500 grams diced carrots and  potatoes; cooked peas and sweet corn.

1 small diced onion

3 flakes of garlic finely minced

1/2 inch piece of ginger

1/2 teaspoon turmeric

3 tablespoons olive oil

5 cloves

5 black pepper corns

1 inch stick on cinnamon

Salt as per  taste

3 cups warm water

Slice the bacon into strips and fry with onion, garlic, ginger, cinnamon, cloves, pepper for above 3 minutes on medium flame. Add the chopped meat and stir fry for another 3 minutes then add the vegetables. After adding the vegetables, once again stir fry for 3 miuntes and then add warm water, turmeric and salt and bring the stew to boil. Reduce flame to low and let the stew cook for at least 25 minutes.

Garnish with parsley and croutons and serve hot!
