Prawn and Spinach Stew

This delicious stew recipe has the wonderful taste of prawns and spinach cooked with mushrooms, garlic and onions in a thick mixture of milk and vegetable stock.

The delectable taste of prawns in any dish is delicious. Mixing them into a scrumptious stew with spinach covered in Gruyere cheese and combination of mushrooms, garlic and onions in a rich and creamy broth. Makes this an extraordinary stew with a mouth watering taste.

Ingredients

  • 6oz mushrooms (sliced)
  • 1 onion (chopped)
  • 1 garlic clove (minced)
  • 1oz butter
  • 1oz plain flour
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground black pepper
  • 1 bay leaf
  • 14fl oz vegetable stock
  • 8fl oz milk
  • 8oz cooked prawns (peeled and de-veined)
  • 7oz fresh spinach (torn)
  • 3oz Gruyere cheese (grated)

Preparation

In a medium saucepan, cook the mushrooms, onion and garlic in the butter until soft. Stir in the flour, nutmeg and pepper, and add the bay leaf. Add the vegetable stock and milk, and cook, stirring, until the mixture has thickened.

Next add the prawns and cook for a further two minutes. Add the spinach and cheese. Then cook and stir until the spinach wilts and the cheese melts. Remove and discard the bay leaf. Serve hot and enjoy.
