Puerto Rican Soup
This is my family recipe of a soup known as "sancocho" in Puerto Rico.
People like to make soups when it is raining. My mom is from Puerto Rico and, during raining seasons, she makes this soup. I love it. I hope you like it too.
1/2 lb. of potatoes
4 green bananas
2 green plantains
3 corn on the cob
1/2 lb. of yucca
1/4 of yautia (It is a vegetable from the Caribbean. You can find it in many markets.)
1/4 lb. calabaza (It is a vegetable from the Caribbean. You can find it in many markets.)
2 lbs. of beef cubes
1/2 teaspoon of salt
2 beef flavor bouillon cubes
2 spoons of Sofrito Goya (This is a mix of onion, garlic and different types peppers, that has been put in the blender.)
2 cups of water
Procedure:
1. Peel all the vegetables.
2. Put the beef cubes in a deep metal pot. Turn on the stove, put the pot on the stove. Add the water and boil the meat for 30 minutes or until is tender.
3. Add all the vegetables, the Sofrito, the salt and the beef bouillon cubes. Cover and lower the temperature to medium. You can let the pot a little bit open, so the vapor can get out.
4. Let everything boil, until the vegetables are soft. Usually this takes from thirty to forty minutes. It is ready to serve.
5. You can eat it really hot or wait until it cools down a little. Many people like to eat a bowl of white rice when they are having this delicious soup.
When you make this recipe, you will have enough soup for four or five adults.
