Pumpkin custard makes a great Halloween treat.
Modern Family cookbook from 1960’s My mom’s first cookbook
1 cup canned pumpkin
1 egg beaten slightly
1/2 cup brown sugar packed
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1 Tablespoon hot water
1 cup evaporated milk
Mix pumpkin with egg, sugar, salt and spices blended to a paste with the hot water.
Stir in milk, then pour mixture in custard cups. Set cups in shallow pan of hot water and bake in a moderately slow oven 325F 40 minutes or until custard tests done.
How does custard test done?
Insert A sharp pointed knife into one custard in two places: at center and and halfway between center and side of cup. First point may be slightly underdone, indicated by semi liquid custard adhering to knife; second point should be done, indicated by knife coming out clean. Custard cup holds sufficient heat to complete cooking of custard after removing from oven.
