Recipe for Pea and Mint Soup
An unusual but very tasty soup, normally serves four people as a light meal or lunch.
Ingredients
-
Approx 240g Garden Peas, fresh or frozen. (If you like a really thick soup, feel free to add more)
-
1 Large Onion
-
1 ½ Pints of good quality stock and hot water
-
2 tablespoons of dried mint or the equivalent in chopped fresh mint
-
2 tablespoons thick fresh cream
-
Seasoning
-
Fresh bread to serve
Method:
-
Add your stock and water to a heavy bottomed pan and place it on the heat. Chop your onion finely and add it to the pan along with the peas and a touch of seasoning. Bring to the boil and then simmer till your onions are soft and almost clear.
-
Pour your mixture into a food processor and blitz until you have a smooth consistency. Add your mint and cream and blitz again.
-
Return to the heat and gently heat till piping hot, being careful not to heat it too quickly or your soup will separate.
-
Remove from the heat and serve with fresh bread.
