Recipe for Pea and Mint Soup

An unusual but very tasty soup, normally serves four people as a light meal or lunch.

Ingredients

  • Approx 240g Garden Peas, fresh or frozen. (If you like a really thick soup, feel free to add more)

  • 1 Large Onion

  • 1 ½ Pints of good quality stock and hot water

  • 2 tablespoons of dried mint or the equivalent in chopped fresh mint

  • 2 tablespoons thick fresh cream

  • Seasoning

  • Fresh bread to serve

Method:

  1. Add your stock and water to a heavy bottomed pan and place it on the heat. Chop your onion finely and add it to the pan along with the peas and a touch of seasoning. Bring to the boil and then simmer till your onions are soft and almost clear.

  2. Pour your mixture into a food processor and blitz until you have a smooth consistency. Add your mint and cream and blitz again.

  3. Return to the heat and gently heat till piping hot, being careful not to heat it too quickly or your soup will separate.

  4. Remove from the heat and serve with fresh bread.
