An easy recipe for basic vegetable soup. Economical and filling, great as a light meal or a starter.

RECIPE FOR VEGETABLE SOUP

An easy recipe for basic vegetable soup. Economical and filling, this soup is great as a light meal or a starter. Experiment with different vegetables to suit your taste or add chicken for a tasty chicken and vegetable soup.

4 large potatoes

2 leeks

4 carrots

1 large onion

1 turnip

2 parsnips

2 tablespoons pearl barley

2 tablespoons of red lentils

1 tablespoon of dried mixed herbs

2 vegetable stock cubes

Salt and pepper

Peel and dice all the vegetables, place in a large pan with the other ingredients. Boil and simmer until very soft, and then puree with a blender to the required consistency.

The soup freezes well, so can be made in bulk and frozen in single portions.
