Russian Beet Soup Recipe: Borsh

Soups are very important part of our diet. The chicken stalk has healing and building properties, cooked vegetables rich with nutrients are easily digested. Soups are particularly beneficial to people with weaker constitution and people with digestive problems. Prepare your own healthy chicken broth:

Wash then boil for about 5 min 2 raw chicken wings or 1 raw chicken leg in a small amount of water, take it out and wash the chicken once again. Place the chicken in 3 quarts of boiling water, salt it, boil for 1 hour. Take the chicken out. Chicken broth is ready.

Soup Ingredients

1/2 medium onion, chopped

1 clove garlic

2-3 medium size carrots

3 medium size beets

1/3 small cabbage

2 1/2 quarts chicken broth

3-4 red potatoes

3 black peppercorns

3-4 medium size bay leaves

Sour cream

Directions

To a boiling chicken broth add chopped cabbage, beets and carrots. Cook in slow heat 15 minutes. Cut red potatoes in cubes and add into the soup. Salt. Cook in slow heat 30 minutes. While the vegetables are cooking fry in butter or olive oil chopped onion and 1 clove of garlic till the mixture becomes golden- brown. Add into the soup. Add bay leaves and black peppercorns. Check if there is enough salt, if not, salt again. Boil the soup for 10 min.

Russian Beet Soup Borsh is ready to be served. Place one serving portion into the dish and 1 table spoon of sour cream.
